GRIFFITHS ELECTROMAGNETIC BOWL CUTTER: OVERVIEW

The Griffiths Electromagnetic Bowl Cutter (GEMBC) is an electromagnetic field-governed retrofit and new-build architecture for industrial bowl cutter machines, targeting the Seydelmann K-series form factor. GEMBC replaces the mechanically-fixed blade shear gradient of conventional bowl cutters with a circumferentially uniform EM-assisted shear field, governed by an eight-element coil array mounted at the bowl perimeter and driven by a GaN/SiC Power Modulation Unit (PMU). Eight alumina ceramic coupling windows (Al₂O₃ 99.5%, 60 mm diameter × 18 mm depth) are machined into the 316L stainless steel bowl shell to provide EM transparency while maintaining full food-contact compliance and CIP (Clean-In-Place) compatibility.

The governing physics is dual-band dielectric heating: the 2–5.5 MHz band targets lean-phase (protein/water) comminution through EM-assisted shear; the 8–15 MHz band targets fat-phase emulsification through electrohydrodynamic (EHD) interfacial forces. A DIGSP (Digitally Integrated Governing System Platform) dual-layer control architecture governs both: Layer 1 (1 kHz reactive loop) maintains real-time field stability; Layer 2 (10 Hz predictive loop) manages thermal state via a 12-point sensor ring and Digital Twin Kernel. Product temperature is held to ±0.5°C (95% CI: ±0.3–0.8°C). Comminution coefficient of variation (CV) is reduced from 14% (conventional) to below 2% (GEMBC). Blade torque is reduced 35–50%, extending blade drive bearing L10 life from 12,000–18,000 hours to 64,000–95,000 hours.

Economic analysis for a 5,000 kg/day sausage line: retrofit CAPEX $117,000–$190,000; net annual benefit $306,000–$484,000 (yield recovery, thermal cycle credit, CIP savings); OPEX approximately neutral; retrofit payback 3–7 months; five-year total cost of ownership (TCO) saving $290,000 per K504 machine versus conventional. GEMBC contributes two new Griffiths Canon capabilities: food-matrix EM field governance (first Canon HF dielectric control in a liquid/semi-solid food matrix) and dielectric comminution index (CI) sensing (first real-time CI feedback during batch processing).
